I'm looking for a noodle soup recipe, something with lots of flavors. Please something that you have tried and tested. I'm looking for something special. I have an adventurous palate.

  1. THAI NOODLE SOUP  

    1 package (3 ounces) ramen noodles

    3/4 pound chicken tenders

    2 cans (about 14 ounces each) chicken broth

    1/4 cup shredded carrot

    1/4 cup frozen snow peas

    2 tablespoons thinly sliced green onion tops

    1/2 teaspoon minced garlic

    1/4 teaspoon ground ginger

    3 tablespoons chopped fresh cilantro

    1/2 lime, cut into 4 wedges

    1. Break noodles into pieces. Cook noodles according to package directions (discard flavor packet). Drain and set aside.

    2. Cut chicken tenders into 1/2-inch pieces. Combine chicken broth and chicken tenders in large saucepan or Dutch oven; bring to a boil over medium heat. Cook 2 minutes.

    3. Add carrot, snow peas, green onion tops, garlic and ginger. Reduce heat to low; simmer 3 minutes. Add cooked noodles and cilantro; heat through. Serve soup with lime wedges.



    OR

    THAI NOODLE SOUP  

    rice stick noodles or rice noodles

    beef flavored soup base

    hot sauce

    1 onion

    1 green or red jalapeno (or Thai chili)

    cilantro

    basil

    green onion (optional)

    white ground pepper (optional)

    beef

    vegetables

    fried shallots

    Preparation:

    Chop up the onion into a few very thin slices.

    Cut your beef against the grain also into thin slices.

    Cut the remaining ingredients to the size you prefer.

    Boil two pots of water. One for the noodles and one for the soup base.

    Once the pots are boiling, add the desired amount of soup base into one pot and a desired amount of rice stick noodles into the other.

    Toss all of the ingredients including the beef into a large bowl

    Once the noodles are soft (not mushy), take them out and place into the bowl.

    Once the soup has re-boiled, pour into the soup into the bowl. The heat will "cook" the beef to a tenderness you haven't yet had. DO NOT boil the beef first unless you like chewing beef.

  2. boil a bit of noodle (a 100 gms, of your choice, spagetti is prefered). chop a piece of chicken breast or two according to the consistency. Boil four glasses of water and add in some stock cubes (maggi, anything u like..). boil well,, and add in the cooked boiled noodle...and the chicken....boil so well that it thickens (sprinkle a bit of flour to thicken it)...please dont add any flavours....in a sautee pan, fry onions  (one large, and one large clove of garlic). Sautee well...and blend into the soup....it wud be sooo yummmmmmmmmmmmmmmmmm if u could just garnish it with coriander leaves.....try it and tell me u luv me...hehe..
