  1. Colors don't matter but types of chili do.  

    There are certain types of Thai chili that are really hot.. approx 8-9 from 10 scale. Thai curry sauce you have in Thai restaurants in US or elsewhere are made to accommodate westerners. It is probably 2-3 from 10.

  3. Green is hotter, followed by red, then yellow. There is even a milder version called rendang after that.
