does anyone know how to make pad sew ???? ive tried everything but i cant get it right , i have the noodles and ive tried it with fish sause and it tastes nasty and ive also tried it with oyster sause and it tastes gross too .... anyone know what im doing wrong , or know how to make it ?!?!

  1. Siew means soy sauce in Thai, and soy sauce is an important ingredient in this dish.  If you don't have wonderful, delicious soy sauce from an Asian market (that is, if you're trying to use plain ol' kikkoman), this dish will never taste right!

    Here's a good recipe:

    For the marinade:

    1-1.5 tablespoons freshly grated ginger

    3-5 cloves garlic, minced

    1 tablespoon tapioca starch

    3-5 cloves garlic, minced

    1 tablespoon rice cooking wine

    1 tablespoon fish sauce

    2 tablespoons dark sweet soy sauce

    1 tablespoon oyster sauce

    1 tablespoon palm sugar

    1 teaspoon sesame oil

    1/2 teaspoon freshly ground black pepper

    1 tablespoon chopped green onions

    1 tablespoon chopped shallots

    1/2 - -1 pound meat of your choice:  beef, chicken, pork, thinly sliced.

    For the dish:

    16 ounces wide rice noodles

    2 tablespoons sweet dark soy sauce

    2 cups broccoli florets

    2 tablespoons fish sauce

    1 tablespoon palm sugar

    1 tablespoons oyster sauce

    2 eggs beaten

    1/2 teaspoon Thai pepper powder

    Combine all the marinade ingredients and add the meat.  Marinate for an hour or so.

    Soak the noodles in warm water for 30 minutes then rinse in cold water. Add noodles to a pot of boiling water and boil for 1 minute, then rinse in cold water again. Transfer to mixing bowl, separate the noodles and toss thoroughly with sweet soy sauce. Set aside.

    Heat a wok or large skillet and a little oil and stir fry the marinated meat. Add the noodles, toss and add the broccoli and stir again. Push the noodles and broccoli to the sides of the wok to open up the middle, then add beaten eggs. Stir the eggs around a bit and then, just before the eggs set, fold all the noodles and broccoli together and stir well with remaining ingredients.

    Sprinkle with the pepper powder and serve.


  2. Add a little curry paste and sugar to the sauce, and chopped fresh cilantro. This will tone down the fishy taste, and liven up the dish.

  3. maybe some soy sauce, ginger, and turmeric.
