Thai food - what can i do with my extra chillies?

i bought a pack of fresh green bird-eye chillies and used 25 of them for my paste - and still have around 100 left - what can i do with them,

and i also have a pack of kaffir lime-leaves too - what can i do with them - freeze them or what

don't want to just throw them all away.

  1. Yes, just freeze them till you want them for something else. They keep well for ages in the freezer.

  4. you can add a few chillies to any food that you want to spice up a bit.

    It doesn't have to be thai.  Use it in stews, soups, or gravy. On pizza or in Chinese.

    Yes, you can freeze the leaves and take out a piece or two at a time.

    They'll last about a year.

  7. those sound so good.  You might be able to freeze them for next time you make the past.   Also, the kaffir lime leaves are used to make Thai green curry paste.  They're an important part of that dish.  You can freeze those too.  Moisture is what will deteriorate those ingredients.
