The Chelsea Festival 2008- Do You Understand the Logo?

The logo for this year`s festival is a cow. Does anyone understand why the cow and to what it relates?

Perhaps someone on the committee can explain?

This was the cover picture of a Pink Floyd album...but I don't know the connection...

Edit: Ok, apparently they are performing part of the album 'Atomic Heart Mother' from which the picture comes..
