The Gracies are whom got me into U F C (back in the day) They went undefieted for quite some time.... Until Kimo came along if I remember correctly. so my answer would be Royce Gracie.

well as everyone knows gracies do have submissions skills. but fedor can stand twice as good as royce. i think itd be a good one if they were in the same weight class.
