Truthfully I have not come across just one or two books that would encompass everything that a child will learn.  It's wonderful to hear that you are amongst the rising number of fathers that are becoming more involved with their child's education.  My suggestion to you is to continue reading books to your baby, playing games with your baby and most important talking to your baby and telling him about everything that you are doing.  Allow him to explore with you in the every day experiences.  If you are cooking, include him.  If you are working outside, include him.  The greatest things that you can teach your child is empathy, persistance, confidence, and independence.

When your baby is entering the preschool years and you would like to continue his education consider the Kumon "workbooks" (I'm not a big fan of workbooks but these tend to be brightly colored and I've yet had one child not like them)...for Reading I suggest Teach Your Child To Read in 100 Easy Lesson by Siegfried Engellman (but remember that this book will not be successful if you child is not ready to learn).  There are some great computer games out there like Reader Rabbit.  Take your child to story time and playgroups if available.
