  1. To access the transformer you will need to remove the trim and recessed socket.

    Being a recessed light, there will either be springs that hook into small holes at the top of the trim,  or spring "fingers"  that grip the sides of the trim as it is pushed up into place.

    The regular springs just unhook from the holes.

    The spring fingers need to be pressed towards the center, as you pull downward on the trim.

    One type of recessed light, the light socket will come out with the trim, and have a flexible metal piece that hangs out of the ceiling with it.  This will have two clips that you can squeeze to release the socket from the trim.

    Another kind of recessed light the trim will come out, but the light socket will remain in the ceiling.  This socket should have three small screws near the edge, that you need to remove to get the socket to hang from the ceiling.

    Now (make sure power is off) you will be able to remove the transformer.  it will be attached to a metal plate that is held in place with a clip on top of the wiring box in the ceiling.

    You will need to take apart the splices to remove it.

    AND... just because the light is switched off doesn't mean that live power isn't present in this box.

    If you're confident in your abilities to do this -go for it.
