  1. Usually it means it gone bitter.


  2. Yes it's good, just cut away the brown spots. If the whole thing seems mushy toss it.

  3. Usually that means it's gone bitter ... eggplant doesn't keep very well and should be cooked as soon as possible after buying.

    I would cut up a few pieces and saute it in olive oil, then taste it ... if it tastes okay - saute it all up and add to a tomato sauce to have with pasta. Or make a caponata:

  4. Charlie is right. Cut the portion which are brown and use the rest.
