  1. I would say YES  although I have never seen it.  

    Are they on the pickles or the jar?  If it is the jar...

    Apply some oil on the inner sides of the jar in which they have to be stored. They stay fresh for a long time and also free from fungus

  6. Not all mould is  harmful or or else Blue Cheese would not be sold nor would it be enjoyed by many. This cheese has blue veins of  "friendly mould" i.e. bacteria that add a distinctive flavor  much like acidophilous bacteria changes milk to yogurt, imparting that special flavor texture and taste.

    Mould formed in the process of homemade pickling, i.e.  a thick skin  that forms on top, is removed carefully and discarded. The rest of the pickle is stirred well and then left to cure and  mature. Once fully mature, mould will not form anymore.

    Homemade pickles are stored in large wide-mouthed porcelain jars called Bharani. During the early stages of maturing of the pickle a thick skin like layer of mould forms on top -- as in pickles like Vadu Manga. This forms even when there is a clean piece of muslin tied to protect the mouth of the jar. This is because the pores in the weave of the cloth allow yeast from the air to pass through and thrive from the traces of moisture present.

    In the process of making pickles, every few days the jar is opened, i.e.  the muslin cloth is untied, the mould skin is scooped up with a clean dry spoon, and discarded. Then the jar is left open in the sun during the day. When the sun is gone the clean cloth is tied back on. The jar is left in a cool dark place till the time comes for it to get the sun again. When the pickle is ready, the moisture is all gone and the acidic and/or oily part protects the pickles from spoilage.

    Now, if you are talking about fuzzy. hairy type of fungus that sometimes appear in store bought small jars of pickles then discard that jar. A well cured mature pickle kept in a tightly closed bottle will not get fungus even if kept on the shelf or cupboard.

  7. Never touch the pickle with hands. Clean the fungi and spray the vinegar over it and tighten the lid properly. For, everyday use, take out some pickle in another jar using a very clean spoon dried on the gas flame.
