Question:

The girls in my office are on a diet. What could I bring in to celebrate a birthday?

Obviously cake, cupcakes, brownies are a no go. I would like to bring in something good but meets diet standards.

  1. look on food network.com or epicuriouse.com  but heres a  good healthy dessert okay one pear cut in half  take out the seeds and make a hole in the middle bake it on 375 for about seven to eight minutes get any kind of fruiut like raisens ,rasberrys,or blue berrys and mayby some nuts and cut them in half {so you can fit more fruit in }and but them in the hole in the pear naxt your suspose to use surrup but just mash some berrys and drizzle it over the pear.another recipe .........dark chocolate

  4. This recipe is delicious.  It says breakfast trifle, but it would be a great dessert or celebration dessert.  Put a note with it saying that it's low fat yogurt and fruit, so people know it's not something "forbidden".

    Breakfast Trifle

    Ingredients

    1/2 cup SPLENDA® No Calorie Sweetener, Granulated

    4 cups plain nonfat yogurt

    2 teaspoons vanilla extract

          {You can use Dannon Light and Fit low cal, no fat yogurt in place of the 1st 3 ingredients}

    9 slices Italian style or other white bread, crusts removed

    12 ounces frozen unsweetened raspberries, thawed

    2 tablespoons SPLENDA® No Calorie Sweetener, Granulated

    1 (15 ounce) can cling peaches, no sugar added, drained

    16 ounces frozen dark pitted sweet cherries, thawed and drained

    1 banana, thinly sliced

    Directions Blend 1/2 cup of SPLENDA® Granulated Sweetener, plain yogurt and vanilla together in a medium mixing bowl. Set aside.

    Cut bread into rectangles.

    Mix together raspberries and 2 tablespoons SPLENDA® Granulated Sweetener gently. Do not drain raspberries.

    To assemble trifle: POUR 1/2 cup of yogurt mixture in the bottom of the glass bowl.

    Place 1/3 of the sliced bread on top of the yogurt mixture.

    Top bread with 1/3 of the peaches, 1/3 of the cherries and 1/3 of the raspberries. Drizzle about 1/3 of the raspberry juice onto the bread.

    Place 1/3 of the thinly sliced banana on top of the raspberries.

    Pour 1/3 of the yogurt mixture over the bread and fruit.

    Repeat steps 2-5 two more times, ending by pouring the remaining yogurt over the fruit.

    Cover and refrigerate at least 2 hours or overnight, allowing the bread to fully absorb the fruit juices.

    Serving Size: 1/10 recipe

    Exchanges per Serving: 1 Starch, 1 Fruit, 1/2 Fat Free Milk

    You will need a large clear glass bowl (approx. 12 cups). A bowl with straight sides gives the best presentation.

    Top with fresh fruit as a garnish before serving. Sliced kiwi and strawberries make an excellent garnish.

    This can also be prepared in individual portions following the same layering technique. Use wine glasses instead of a large glass bowl.

  8. I have two easy party recipes that are low cal, low fat.

    Angel Pineapple Cake:

    1 box angel food cake mix

    1 16 oz. canned crushed pineapple

    1/2 cup sliced almonds

    Mix the cake mix powder and pineapple (with the juice) together in a big bowl until well blended. Pour into a 8X11 cake pan and sprinkle with the almonds. Bake for 30 minutes at 350. Cool and cut.

    It's more like a bar cookie than a cake.

    Party Jello Delight

    1 8 oz. tub sugar free Cool whip

    1 16 oz. can crushed pineapple

    1 16 oz. container of low fat cottage cheese

    1 small box of sugar free lime jello

    1/2 cup chopped walnuts

    Mix the Cool whip, cottage cheese, pineapple (not drained), walnuts together in a large bowl-sprinkle the jello powder over the top and mix all well. Pour into the dish you will be serving in and refrigerate at least a few hours or overnight.

    Hope they like pineapple-the jello salad can be made with other flavors of jello and other canned fruits if the liquid proportions are kept the same.

  15. angel food cake and fresh strawberries.. angel food cake is a fat free dessert..can also frost the cake with fat free or sugar free cool whip..just fill the hole of the cake with sliced strawberries... and or  top it with berries..

  21. A fruit tray. Maybe organize the fruit to say happy birthday. If the girl's a good friend, bring a full meal--a healthy one, of course, like (cooked) sushi or stir-fried green beans.

    Or, if she was an ice cream fan before the diet, nonfat frozen yogurt or a fruit sorbet, with fresh fruit on top or on the side.
