  1. The increased acidity causes the milk proteins (casein) to tangle into solid masses, or "curds".  This is one common method to make certain cheeses, like for example paneer cheese, where lemon juice is used to increase the acidity.

    Even somewhat low level of acidity like in Coca-Cola or Pepsi soft-drinks is enough to cause the curdling.

How do you accidentally spill milk on vinegar?  But the curdling is just the acid in the vinegar reacting with the butter fat in the milk.  This is actually a very common cooking process.  When a cake/cookie recipe calls for buttermilk, and you don't have any it is not necessary to go out and buy some, simply add some vinegar to the milk and let it sit for a few minutes.  It will curdle, and then you can add it to the mix.

    This process gives a modified and acceptable substitution for the real buttermilk.

    This, however, only works with recipes that will be baked.  It does not work for salad dressings.
