The pruple turkish juice?

as i said befor am turkish but i dont live there anyway befor 2 monthes i was there and my cousin took me to a place and he bought me the most awsome juice in the whole world its purple salty and full of vegtabels i think its shalgm but am not sure of the name what is it and how can i make it couse they dont have it here and thx. by the way guys we have the best food in the whole world espicly hotdogs.

  1. It is şalgam (turnip) juice. Tastes a little like pickle juice (we drink our pickle juice in pickle stores, too).

    I don't know how to make it, but probably you pickle turnips.

    Try the Turkish stores if you have one nearby.


  2. Yes, it's called salgam, a drink from the south of Turkey, namely Adana (of course I'm going to brag about it :P but I'm not a big fan of salgam )

  3. Şalgam suyu ingredients

    1 kg of beetroot (red)

    3 carrots (they are saying red carrots but I think regular carrots will do as well)

    4 cloves of garlic (I dont think you are supposed to crush or dice these, it would get too much garlic flavor)

    1 lemon

    hot pepper(optional)

    salt [it doesn't say how much]

    HOW TO DO IT

    1) peel, slice and scald the beetroots

    2) in the pot next add the sliced carrots, the peeled garlic, slices of lemon, and optionally peppers. Also add salt and stir (while the water is boiling I guess)

    3) put the mixture into a (large) jar and rest it for a couple of days [I've read that it takes more than 20 days for it to get blood red], wait until the carrots are really red.

    4) chill it and serve it cold

    other optional ingredients include a handful of chickpeas and/or 2 handfuls of bulgur {wiki it} inside a clean piece of cloth/net so it doesnt mix with the drink but gives it flavor. These make it a bit sweeter I think

    How much water you put is not clear in either of the recipes one of them has 10 liters of water for 2 kilograms of carrots, since you have 3 carrots(around half a kg I think) try 3 liters of water

  4. Yes - it does sound like salgam.  I believe it is beetroot juice and you can buy it as a cordial in many shops and supermarkets.
