  1. Cabbage in NOT a meat tenderizer!

    There are four ways to tenderize meat:

    1)  Marinade.  This involves some sort of acid like vinegar or lemon juice.

    2)  Pound the meat with a mallet or a needle mechanism.

    3)  Braise or simmer the meat.  Pot roast is a good example of braised meat.  Corned Beef is a type of simmered meat.

    4)  Let the meat age.
