There are air bubbles in the canned peaches i just finished canning, is that safe?

  1. giggle giggle!! that is a judging point!! They are safe to store and then eat in the middle of the winter.

    But if you were to enter your peaches with the airbubbles in them, in the county fair, you would get a low score. In other words you might be lucky to get third place, not the first place ribbon you would have liked.

    It is really hard to can fruits without getting a few air bubbles in the jars with the fruits. We all strive for perfection when canning our fruits and vegetables. We all want the perfect looking product. This is color, clarity of the syrup or liquid, and no bubbles!

    There is nothing wrong with your canned peaches. They will just have too much air in the jar. That only means you could have put in a bit more fruit or syrup.


  2. You will always have airspace somewhere in the jar.  As Sue said, it's an aesthetic thing.  It doesn't harm the finished product.
