  1. Why not try a themed party?  You could do a luau party - get some inexpensive decorations and serve hawaiian food.  Pina coladas, grilled shrimp with salsa made from mango and pineapple. Or a mexican party.  hang a few sobreros and serve a build your own taco or fajita buffet - salsas, margaritas.  Foodnetwork.com is a great resource for recipes.  They have a tab for entertaining.  Good luck.


  2. Baked Cornish Game Hens serves 4

    INGREDIENTS

    2 Cornish game hens

    1/2 cup melted butter

    1/2 onion, chopped

    1/2 stalk celery, chopped

    1/4 green bell pepper, chopped

    1 (4.5 ounce) can mushrooms, drained and chopped

    2 cloves garlic, minced

    1 tablespoon dried basil

    1 teaspoon dried oregano

    1 tablespoon chopped fresh parsley

    1/4 cup melted butter

    Preheat oven to 325 degrees F (165 degrees C).

    In a small bowl combine the 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano and parsley.

    Season hens inside and out with salt and pepper to taste, then stuff with equal amounts butter/vegetable mixture. Place stuffed birds in a 9x13 inch baking dish, breast side up. Drizzle with 1/4 cup melted butter.

    Cover dish and bake in the preheated oven for 1 1/2 hours. Remove cover and brown at 500 degrees F.

      Potato Salad with Cream serves 6

    INGREDIENTS

    2 1/2 pounds potatoes

    1/2 cup vinegar, boiling

    4 eggs, beaten

    1 tablespoon butter

    1 cup heavy cream

    4 tablespoons chopped fresh parsley

    2 tablespoons chopped onion

    2 teaspoons dry mustard

    1 teaspoon salt

    1/2 teaspoon ground black pepper

    1 pinch ground cayenne pepper

    Peel the potatoes and add to a large pot of boiling salted water. Cook until tender but still firm, about 15 minutes. Drain, cool and cube. Place into a large bowl and set aside.

    In a double boiler, bring vinegar to a boil. Gradually beat in eggs and cook over simmering water until thickened. Stir in butter and cook 1 minute. Whisk in cream, parsley, onion, mustard, salt, pepper and cayenne. Pour over hot potatoes and combine. Cool, sprinkle with parsley and refrigerate until serving time

    Garden Pasta Salad

    1 (16 ounce) package uncooked tri-color spiral pasta

    1/2 cup thinly sliced carrots

    2 stalks celery, chopped

    1/2 cup chopped green bell pepper

    1/2 cup cucumbers, peeled and thinly sliced

    2 large tomatoes, diced

    1/4 cup chopped onion

    2 (16 ounce) bottles Italian-style salad dressing

    1/2 cup grated Parmesan cheese

    Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.

    Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl.

    Combine cooled pasta and vegetables together in large bowl. Pour Italian dressing over mixture, add Parmesan cheese and mix well.

    Chill for one hour before serving.
