Question:

This is my first time cooking seitan...?

and it got all POOFY!

hahah, ive had it before, in food. and i realllly like it - so i decided to take one more step into the vegetarian world and begin exploring cooking different foods.

i followed all the instructions on the recipe, and when i came back to the seitan --- which had been cooking for 30-45 minutes already, it was all blown up like a huge cotton ball or something.

did i do something wrong??? or will it go down, as it cools off?

  1. I'm not sure how you were making homemade seitan (I'm assuming homemade?). There are a few methods to making it: boiling, steaming, and baking. Baking is my preferred method, second is steaming. I don't boil my seitan.  And it will definitely expand during all three methods.

  3. Nope.  If you cook your seitan in a large lump instead of in smaller pieces, it will blow up and get poofy.  There might be a bit of shrinkage as you cool it down, but not that much.  Don't worry.

    I've recently discovered that it works better when I make small "chops" before simmering AND if I don't use it the same day I make it.
