  1. The sentence needs a verb.  Do you mean "I can be aloof at times, especially when people don't know me."?  If so, you might reword the sentence:  "When people don't know me, they often think I am aloof." or "I can be aloof at times, especially if I don't know someone."

  2. "Aloof" is an adjective, not a verb. If you add "be" or "seem" before it and a comma after "times," the grammar will be correct.

"I can seem aloof at times, especially when people don't know me."

  3. Aloof does not really make sense in this sentence. Aloof means that your mind is somewhere else, not serious or to be distant (physically or mentally).

" I may seem ------ at times especially when people don't know me."

You could insert 'Aloof' here, if it is truly what you are intending to say.
