It would be difficult to help with a mission statement if we have no idea as to what the function of the organization is.  There are many humanitarian missions, but they do different things.  Some provide food, some shelter, some clothing and furniture, some are formed to help out after disasters, etc.

Look up the mission statements for these organizations for examples: Save the Children, CARE International, the nearest domestic violence shelter, the nearest Planned Parenthood clinic, any homeless service, Big Brothers/Big Sisters and the National Mentoring Partnership, to name but a FEW "human" organizations.
