I'm planning on making some veggie sushi. Any ideas on a vegetarian topping/filling for maki or nigiri sushi? Thanks!

  1. You should definitely check out Kimbap (which is basically a Korean roll, that's basically vegetarian).

    Here's a nice site:

    http://www.noodlesandrice.com/kimbap-gim...

It's absolutely delicious and really not at all pricey.

  2. 1. Shitake mushroom cooked in dashi (Japanese stock)

    2. Umeboshi ( dried plum)

    3. Cucumber

    4. takuwan (pickled radish)

    5. furikake

    6. carrots

    7. pickled ginger

    8. Avocado

  3. When I worked as a chef we used cucumbers sliced and in strips, blanched carrot the same way, daikon radish either plain or pickled, pickled ginger, spinach, red/green peppers either raw or roasted, green onions, any sauteed mushrooms, asparagus, zucchini and summer squash anything that can be eaten raw /partially cooked or cooked is open to a sushi of some type.

For Maki style is better, even reverse style, on nigiri style it is trickier, but can be done.
