  1. chicken- legs, thighs, whatever is on sale is what I use

    can of stewed tomatoes

    1 onion coarsely chopped

    chicken base

    cumin ( about 2 or so tsp)

    water

    put it all in a pan and simmer until chicken is tender

    eat with corn tortillas

    if you feel like you absolutely have to cook something to go with it- plain minute rice is good w/this

    1 pan, no muss no fuss!!


  2. you could grill out or just make a pizza.

    a hearty italian anti-pasto salad is real good.

    shish-kabobs are ufn  + easy.

    take out is an option  .

    burgers , pasta , etc.

    don't always make dinner an event , relax if you can .

  3. here is somthing simple one pound grind meat and 2 boxes of mac and cheese along with 1 jar of ragu

    cook the meat till brown add the ragu

    seperate pot boil the mac and cheese and prepare as on box

    take cassarole dish are deep pan spreed mac and cheese then cover with meat sauce repeat and then sprinkle shredded cheese on top

    this sounds like it will constipate you but it is actually not that cheesy and taste great my family loves it .

  4. Pasta Salad.

    1 bag of bits of veggies

    1 box of Barilla Pasta Plus

    Mayo

    Soy Sauce

    Place veggies in a large bowl.  Let thaw.  Cook pasta according to directions, drain, but do NOT rinse.  Add hot pasta to veggies and gently stir.  (Rotini is good for this).

    When fully cooled, add enough mayo to cover lightly (Lite mayo can be used, but not miracle whip), stiring constantly with each spoon of mayo.  When satisfied with consistancy, add soy sauce (about 3 TBS at a time) into the pasta mayo and stir.  It will turn a light brown, but the soy gives it the salty taste for flavor.  Refridgerate for a few hours to let the flavors meld.

    Might need to add more mayo before serving as the pasta soaks it up pretty well.  Serve cold with crackers, on salad or with bread.

  5. Baked Fries. You can put them in an oven tray, sprinke some oil and salt on them, and put them in the oven for 25 minutes at 425 degrees F.

  6. just take about 7 potatoes, peel them and cut them into 1 inch cubes. then put them all into a big bowl. take 2 sticks together and then cut them both in half. then put the butter on top of the potatoes. then just put it in the microwave for 14 minutes you can even add frozen peas if you like.

    chicken cheese quesadillas

    pita pockets

    cheese and fruit for dinner (my kids loved it!)

    scrambled eggs
