iam trying to analyse if jean baptiste (from the novel perfumes) really is categorized as psychopat, could u tell me some sites or some theories (for ex: freud) which could i use to make this anallyse? thanks !!

First off, Freud never said much about psychopaths.  Or rather, nothing considered useful by modern psychology.  In fact, the term "psychopath" isn't really used in clinical psychology at all.  The American Psychological Association considers "psychopathy" to be synonymous with Antisocial Personality Disorder.  However, in forensic settings, psychopathy does refer to a set of characteristics slightly different from Antisocial Personality Disorder.  The most commonly used assessment for psychopathy is Hare's PCL-R.  

    As for whether Jean Baptiste of "Perfume" would qualify, it's hard to say.  While he engages in violent, predatory, and fairly remorseless behaviors, he lacks many of the other clinical characteristics of a psychopath.  Thus, it would seem inappropriate to give him that title.  He seems to better fit Antisocial Personality Disorder.
