To whom will the insurance adjuster write the check?

Depends on the insurance company. Most will write the check directly to the contractor but you may ask for a two party check (Both you and the contractor must sign) if you have some question about the integrity of your contractor.

It will either be written to the contractor, or, the named insured and any mortgagees, jointly, assuming there's more than $5,000 of damage.
