Too many tomatoes from the garden, how do you save them (put them up) for later?

  1. I stick them in boiling water for a couple of minutes and then take them out. This makes it easy to take the skins off and then I freeze them. I also make tomato juice and freeze that in ziplock bags. I lie the bags down flat until they are frozen and then stack them like envelopes.Lastly I make tomato sauce, spagetti sauce, chili sauce

    and freeze all of those. I envy you. We have had such a crappy summer this year I have two tomatoes on one bush and just flowers on the other one so no tomatoes for me this year.

  3. Why don't you can them. Canning, is the best way I know of. My mom used to do it for years. We would have tomatoes, for the whole winter, for juice in chili, mostly.

  5. Well this sounds crazy, but you COULD preserve them. By putting them in a freezer, I mean. Freeze it completely, it stops all the growth and aging. Makes me wonder if that could work on us. :O

  6. We canned them as tomato juice, or tomato pieces.

    The equipment can get pretty pricey, but it's worth it in the middle of the winter when you have fresh foods at home =)

  7. Can some for use as tomatoes, dehydrate some for use and freeze some for use in stews and soups.
