Does it just drop you once, or does it bring you back up again and drop again?

It drops you several times but it depends since it is randomized by a computer so that you will get a different experience every time that you ride.

According to wiki:

"In the years since the attraction's initial opening, a randomized pattern of drops and lifts have been added, where the ride vehicle will drop or rise various distances at different intervals."

the tower of terror in disneyworld in FL drops you several times, randomly according to a computer, so no 2 rides are exactly the same!

Unlike the WDW(Disney Studios) Version, Tower of Terror at California Adventure is not a random sequence.
