It varies from store to store.

For example,

Galeries LaFayette is open Monday through Saturday from 09:30 am to 07:30 pm withlate night opening every Thursday until 9 pm and is closed on Sundays.

Printtemps Haussmann is open Monday to Saturday from 9:35 a.m. to 7 p.m with night opening on Thursdays to 10 p.m.

Bon Marche Rive Gauche is open Mondays, Tuesdays, Wednesdays and Fridays, from 9.30am to 7.00pm. On Thursdays from 10.00am to 9.00pm and on Saturdays from 9.30am to 8.00pm.

C & A is open Mondays, Tuesdays, Wednesdays and Fridays from 9.30am to 8.00pm. Thursdays from 9.30am to 9.00pm. Saturdays from 9.30am to 7.30pm

Most stores are closed on Sundays because they have to pay a fine to be open.  The rest of the week, the hours vary by store.  Try googling the store you're interested in to see if they have a website and their hours posted.
