    3 lemons, juiced

3 tablespoons additional heavy cream for topping

    DIRECTIONS

OR these English scones are to die for and you probably have all the ingredients already

    English Royalty Chocolate Chip Scones

    INGREDIENTS

    1 3/4 cups all-purpose flour

    1/3 cup white sugar

    2 teaspoons baking powder

    1/2 teaspoon salt

5 tablespoons unsalted butter, chilled and cubed

1/2 cup miniature semisweet chocolate chips

    3 tablespoons orange juice

    DIRECTIONS

Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with nonstick cooking spray.

In a large bowl, whisk together the flour, sugar, baking powder and salt. With a pastry blender or a large fork, cut in the butter until the mixture resembles coarse crumbs. Stir in the chocolate chips. Mix in the orange juice to form a dough.

Turn out the dough on a floured surface. Pat or roll into a 9 inch circle about 1/2 inch thick. With a 2 1/2 inch fluted biscuit cutter, cut out 12 scones, pushing the dough scraps together for the last few, if necessary. Transfer the scones to the baking sheet.

Bake in preheated oven until golden brown, about 12 minutes. Move to wire racks to cool.

  3. try scones, biscuits, tea cakes, shepherd's pie.

    Here are recipes:

    SCONES

    3 cups self-rising flour, sifted

    1/4 cup oatmeal flour

    1/2 cup butter, melted

    1/3 cup sugar

    milk, buttermilk, or cream

    2 eggs

1 scant cup raisins or currants

    1 teaspoon baking powder

    Preheat oven to 400 degrees.

Pulse the oatmeal in a food processor until it has the consistency of fine flour.

Cut butter into the flour using your fingers until mixture resembles coarse crumbs. Stir in oatmeal, sugar, baking powder, beaten eggs and currants or raisins.

Add enough milk to form a sticky dough, turn out onto a lightly floured board and knead approximately 10 turns. Do not overknead, as this will make the scones tough.

Flatten to a circular shape, about 1 1/2" in thickness and cut wedge shaped pieces. Arrange pieces 1 inch apart in a circle on a lightly greased pan. Brush tops with cream or beaten egg white and bake about 15 minutes or until golden.

NOTE: If using buttermilk, reduce baking powder to 3/4 tsp and add 1/4 tsp soda instead.

These can be made in the food processor up until the point where you add the liquids. Add the dry ingredients to the oatmeal in the first step and pulse to combine, then add the butter and process for a few seconds, add beaten eggs with milk and knead briefly by hand if required. Do not knead in the food processor or scones may be tough.

    HOMEMADE BISCUIT MIX

    Basic Mix:

    4 cups all-purpose flour

    2 cups cake flour

    1/4 cup baking powder

    1 1/2 teaspoons salt

    1/2 lb. Crisco

Sift together flours, baking powder and salt. 1 well combined, cut in Crisco using paddle attachment of mixer.

Store in refrigerator for up to one month. Can be used as a substitute whenever biscuit mix is called for in a recipe.

    Biscuits:

    2 cups basic mix

7/8 cup milk or half and half

Measure 2 cups of basic mix into a bowl and stir in approximately 7/8 cup milk (or 1/2 c. plus 6 tablespoons) using a fork. For richer biscuits, use half and half, or mix cream with milk.

Turn out onto a lightly floured board and knead for approximately 30 seconds, being careful not to over work the dough.

Roll into a circle 1/2" thick. Cut into biscuits using a floured biscuit cutter or slice into wedges. Place on a baking sheet.

Press centers of biscuits with thumb or the back of a spoon, and brush lightly with cream or milk.

Bake in a preheated 450°F oven for 10 to 15 minutes.

Makes 10 to 12 large biscuits.

    OLD FASHIONED TEA CAKES

    1 c. butter

    2 c. sugar

    3 eggs

    4 c. flour

    2 tsp. baking powder

    1 tsp. vanilla

    1/8 tsp. salt

Cream butter and sugar. Add slightly beaten eggs, flour, baking powder, vanilla and salt. Roll on floured board and cut. Sprinkle with sugar and bake at 400 degrees for 12 to 15 minutes.

Makes 9 to 10 dozen depending on size. This will make a fairly thick tea cake. For thinner, roll dough thinner.

    REAL ENGLISH SHEPHERDS PIE!

    1 onion, diced

    1 tablespoon olive oil

    1 lb. lamb, minced

    1 clove garlic, crushed

    1 large carrot, diced

    1 beef stock cube

    1 lb. chopped tomatoes

    1 tablespoon corn flour

    3 tablespoons tomato puree

    pinch of salt and pepper

    2 lb. potatoes

    1 stick butter

This is how to make a real English shepherds pie, made with lamb. If made with beef, it would be known as cottage pie.

Firstly, heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft. Add minced lamb and stock cube, then cook until the mince is brown and shows a crumbly texture. Stir in the tomatoes and tomato puree, and add the corn flour. Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened.

Meanwhile, peel and chop potatoes and boil until soft, then mash them with the butter and salt and pepper to taste.

Put the filling into a deep dish, then top with the mashed potatoes and put under a warm grill (broiler) until the top is brown and crisp.

Delicious topped with melted cheese. Enjoy!
