Question:

Transparent Candy? How?

I noticed that when I melt white sugar it turns brown when i melt it.. and I am sure brown sugar doesn't turn white when i melt it. lol.

Now I was wondering how i could make TRANSPARENT CANDY? If someone knows the recipe to it and could send it to me or answer this question, that would be appreciated,

  1. You are just cooking it to too high of a temperature.  Over 310 degrees, sugar will start to turn amber color.  Cook your sugar to 300 and remove it from the heat because the heat from the pot will continue to cook it.  Immediately put the bottom of your pot into an ice water bath as well to stop the cooking.  

    I meant to mention that you want to cook your sugar to the "hard-crack" stage. (not caramelization stage)


  2. Sorry can't help with a transparent candy...but here's a white candy recipe...

    2 Packages of White Chocolate Chips (12 oz. each)

    2 c. Peanut Butter Captain Crunch Cereal

    2 c. Rice Crispies Cereal

    2 c. Mini Pretzels

    1 c. Peanuts

    Melt chocolate chips and stir in the rest of ingredients until coated. Spread on a cookie sheet covered in wax paper and cool until chocolate hardens. Break into chunks (like peanut brittle).
