25y/o single woman--what's a better vacay: spain or italy?

It depends on the type of journey you want.  If you are looking for a more fun packed holiday I would say spain.  Maybe if you choose spain visit the canary islands.  But if you're looking for more of a cultural vacation then I'd say Italy.

I'm 25 as well and I prefer Spain to Italy but it's a personal choice.  Both are great
