Tried to cool wort in carboy....took a long time to cool...what can I expect?

I thought I could cool my wort in the carboy by adding two gallons of cold water......well it didnt work and it took about 5 hours to cool off. I just pitched the yeast, 6 hours later nothing happened yet

so what should I expect if anything

  1. You won't see fermentation take off for at least 24 hours, probably.  Don't worry.  As long as you pitched below 90F or so, it should be fine.


  2. What was the temp when you pitched?  The ideal temp is 70 to 75 F.  Ale or lager yeast?

  3. As long as your wort hasn't been contaminated, you should be OK. You probably won't see any bubbling in the airlock until tomorrow.

    Next time, cool the wort quickly in the pot. I can chill a batch in a matter of minutes with a wort chiller.
