Question:

True italian bolognaise?

is there any italians out there can tell me the true recipe for spaggetti bolognaise. i love to have it

  2. ciao! i'm italian!i live in como, sorry but i don't speak english so well!

    however i can tell you that with bolognaise (in italian " ragù alla bolognese" ) you need tagliatelle o i maccheroni, like "fusilli" or "penne". do you know?but don't use spaghetti please!

    then you need: tomatos souce (or if you prefer use fresh tomatos), ground meat of beef, onions, olive oil, salt, carrots,celery and red or white wine (i usually red wine)

    first: put in a frying pan or in a pot olive oil and some onions, than cut the carrots and celery and put in to fry lightly for about three minuts.

    then put in thepot tomatos souce with ground meat. and than add 1/2 glass of red wine and salt.

    let cook the souce for about one hour!

    then cook the maccheroni and put on its bolognese.

    at the end if you like you can use on the pasta parmigiano reggiano cheese or if in the USA it there are, use grana padana cheese!

  3. Ragu Bolognese (serves 4)

    2 tbls olive oil

    1/4 c finely chopped onion

    1/4 c finely chopped celery

    1/4 c finely chopped carrot

    2/3 lb beef -- minced or coarsely ground

    1/3 lb pork -- minced or coarsely ground

    1 tsp salt

    ground black pepper

    1 c red wine

    1/8 tsp nutmeg

    15 oz whole canned tomatoes -- roughly chopped, with their juice

    2 tbsp tomato paste

    1/2 lb spaghetti

    Parmigiano

    Basically you put oil in a frying pan and add celery and carrot, for 2 minutes. then you brown the onion, 2 more minutes.

    At this point you want to saute all the meat till it's all brown. Add salt and black pepper and wine, till the wine has gone almost completely.

    Pour all of this in a saucepan, add the tomatoes and the tomato paste then simmer for 40 minutes.

    In another pan, cook the spaghetti.

    Serve the spaghetti with the ragu on top of it, and grated parmigiano cheese.

  4. I'd add a little lamb (veal hard to get for me), and also a little cream or half&half. Nutmeg and just a pinch of cinnimon.
