  1. tuna pasta bake

    Ingredients :

Dried pasta to serve 4 (I find shells work well with this, but again, down to preference)

2 tins of tuna (I use in springwater)

1 tin of mushroom soup (condensed works best, but if not, cream of mushroom)

    1 tin of sweetcorn

    1 onion chopped mushrooms

    2 cloves of garlic

2 tablespoons of extra low fat cream cheese

1 handful of low fat grated cheese

    lots of black pepper

    Recipe :

1-Add pasta to boiling water and cook according to packet instructions, whilst this is cooking, prepare tuna sauce:

2-Chop onions - fry with garlic til slightly translucent, but not brown, they should add a crunch to the finished dish.

    3-Add tin of soup.

    4-Add sweetcorn.

    5-Add mushrooms.

    6-Drain tuna tins and add.

7-Add cream cheese and grated cheese.

    8-Add lots of blak pepper.

    9-Drain the pasta when cooked.

10-Add pasta to the sauce and toss.

11-Serve straight away with more grated cheese if required and garlic bread (low fat of course!)

Drain pasta, rinse with boiling water and place into a large dish. Pour the tuna mixture over the pasta and stir well. top with grated cheese and place in a pre heated oven 200C for 5 mins or until cheese has melted. Both kids and adults should love this easy recipe.

  6. I just soften some chopped onion in some oil in a pan, add a tin of plum tomatoes, add garlic and seasoning and chuck in a few veg (frozen or tiinned peas/sweetcorn/carrots, etc are fine) and then, when that's heated through, I throw in some cooked pasta.  If the mix appears sloppy then I thicken it up with a small amount of cornflour and water (but add it in a very small amount at a time as it thickens pretty quickly!) and heat through again, making sure you stir it well.  Once you've got the sauce to the consistency you want and the taste is to your liking, stick it into a casserole and stir in the tuna.  I then normally add either sliced cheese or a scrunched up packet of crisps to the top and then put it in a medium oven for about 20 mins.  Can't advise on quantities as I'm not sure how many people you're cooking for.
