Tuna Tartare recipe?

Does anyone have a good recipe they would like to share? The asian market down the street from me has some great looking ahi tuna and I would like to make tartare this evening.

  1. California Avocado and Ahi Tuna Tartare ---

      

    Ingredients



    •   1½ Tbsp. wasabi powder

    •   1½ Tbsp. water

    •   ¾ cup seasoned rice wine vinegar

    •   ½ cup  lemon juice

    •   ¼ cup  soy sauce

    •   3 large  cloves garlic, chopped finely

    •   1½ tsp. salt

    •   1¼ cup  vegetable oil

    •   ¼ cup Asian (toasted) sesame oil

    •   12 (about 6 pounds) SYSCO Brand avocados

    •   4¼ lbs. ahi tuna

    •    Natural baby spinach, for garnish

    •   Julienned daikon, for garnish

    •    julienned carrot, for garnish

    •   pear, thinly sliced, for garnish

    •   Deep-fried strips of egg roll wrapper, for garnish

    •   chives, for garnish





    Preparation



    1.   To make dressing, mix wasabi with water, let stand 10 minutes.

    2.   Whisk together wasabi, vinegar, lemon juice, soy sauce, garlic, and salt; whisk in oils. Reserve.

    3.   Per Order: Mix ½ diced avocado with 3 ounces coarsely chopped tuna; gently fold in 2 tablespoons reserved dressing. Arrange on baby spinach leaves; garnish with daikon, radish, and pear. Scatter top with deep-fried strips of egg roll wrapper and chives.

    Ahi Tuna Tartare Tower Recipe --

      

    Ingredients:

    12 oz. fresh salmon

    12 oz. fresh Ahi tuna

    2 medium-sized avocados

    2 T finely chopped onions

    2 oz. Oriental seaweed marinated in Wasabi (obtained at gourmet makets)

    4 T sesame oil

    2 t. rice vinegar

    1 t. brown sugar

    lemon juice to taste

    crispy noodles

    toasted sesame seeds

    Directions:

    Dice separately salmon, tuna and avocados. Combine onions with avocados.

    Use a quart tin mold like a Roma tomato paste can, open at both ends.

    Gently layer mold starting with layer of tuna, avocado, and salmon. Chill in refrigerator for at least one hour. To serve, unmold on a plate and pour dressing over tower.

    To make dressing, combine sesame oil, vinegar, brown sugar and lemon juice.

    Garnish with seaweed, crispy noodles and sesame seeds. To serve, slice tower and garnish each serving with additional seaweed, noodles and sesame seeds. An optional garnish is a dollop of caviar on the side of the plate.

  4. Chop the tuna finely, mix with lemon juice, sesame oil, finely chopped red pepper, fresh ginger and scallions.  Let marinate for a while and then top with some sesame seeds and serve on crackers or toasted baguette slices.

    You could also do the tuna carpaccio style:  slice thinly, drizzle with some lemon juice and serve with capers, arugula and shaved pamiggiano reggiano cheese.
