I have to write a diary for my tutorials and I always seem to go about coursework, lessons and uni applications. Is there anything else I could talk

don't know if this will help you, I had to do a similar thing for my course but we had to talk about what we had learned, experiences, and how we felt about the lesson and ideas of how it could have been improved to help you to learn that bit easier
