That would be very difficult to do. Crops are rotated so not to wear out the soil, Some areas are intentionally not planted at times due to specific reasons.

What you are asking for will be almost impossible to find due to the size required to get that much information on one map. The information you want is there, but you are going to have to break it down into smaller pieces to find it.
