Lyoto Machida (Undefeated, and he beat Ortiz, and Sokoudjou)

Mauricio "Shogun" Rua (A win at 205 in his next fight will put hit in contention at a title shot, and I think his itching for a rematch against Griffin)

I have to think Liddell first.  He is the older of the contenders and the UFC can capitalize on his star power while he is still in great physical condition.  I think the UFC should look to schedule Rampage v. Wanderlei Silva first though.  What a great rematch that would be.
