If you're planning on buying them all prepare to spend hundreds of thousands of dollars.  I would buy the trades rather than the single issues.

There's a DVD that contains PDF files of all the issues of Uncanny X-Men (up until about 2005 or so).  You can get it at amazon.com or other places.   It's called 40 years of X-Men.  It's decent, it has some average quality scans of things.  Has all the ads too, which is kind of fun.

www.h33t.com is one place you can get them all "Illegally".  You can "Buy" them all from Marvel Digital (right off there website).  I am not sure if they have every single one of the Uncanny line but I think they would have them on there by now.
