Unique but light Labor Day recipe?

I want to make a dessert for Labor day, i wanted to make a red white and blue cake, but I'm not finding anything figure friendly. I want something unique. I was thinking maybe just making simple cupcakes and just putting food coloring in the batter and then frosting them with cool whip... any suggestions?

  1. Your cupcake idea is good and easy. Instead of using food coloring, you can even use red, white and blue sprinkles, or sugar crystals.


  2. Blueberry Dessert:

    2 packages Cherry Jello (large)

    1 can Blueberries in juice

    1 can (15 oz.) Crushed pineapple in heavy syrup

    1 package Philadelphia Cream Cheese

    1 Tsp. Vanilla Extract

    ½ cup sugar

    ½ cup chopped pecans

    Dissolve Jello in 2 cups boiling water.  Add blueberries and pineapple with juices.  Let set till firm in refrigerator.

    Topping:

    Mix sour cream, cream cheese, vanilla, sugar and nuts.  Blend.  Cover Jello  with topping when firm and refrigerate until ready to serve.

    And you can put fresh blueberries and raspberries on top to get that Red, White and Blue effect.

  3. Do a sponge cake or tart shell with red (strawberries, raspberries) and blue (blue berries, blackberries) and white (whipped cream, cool whip)...its a healthier alternative....and looks nice too.

  4. Cupcakes aren't necessarily "figure friendly."  You could just get (or make) an Angel Food cake and cut it into 3 layers.  Layer with light Cool Whip, fresh blueberries and raspberries (or sliced strawberries), with more Cool Whip and berries on top ....  Or make a Jello Poke Cake using red & blue jello (but not low calorie); cover with Cool Whip and sprinkles

  5. Make your red white and blue cake by using lots of strawberries (red), blueberries (blue) and low fat cool whip (white).   You can even place the berries and cream on top of your cake in the form of the flag.   Put it on top of a light sponge cake to keep the calories lower...
