  1. Some lovely pictures here which should give you some ideas.

  2. Radish Roses ( cut the tip off each end; make about 5 small slices - don't cut all the way through - at one end.  Put them into cold water in the refrigerator and they'll open) ....   Cut carrots with a French fry cutter  ...  Put the dip into hollowed-out bell peppers  ...  Use some unusual vegetables (peeled jicama, snow peas, snap peas, sliced crookneck squash)  ...  Search VEGETABLE CARVING and you'll find some easy ideas to make squash birds, apple birds, etc. to decorate the tray....

i have seen a few done with the food put in to patterns on the tray, some in verticle sections

some in a squiggle pattern too...

  4. Sometimes, for a change of pace, I'll make up a veggie bouquet instead of a tray.  Start by putting a half head of cabbage in the bottom of your container.   Then put veggie chunks onto  skewers of different lengths (1 per stick).  Using colorful veggies makes it prettier.  Broccoli pieces, whole cherry tomatoes, carrots, gold, red & green peppers,  radish roses, whole mushrooms, curled (cut & iced) green onions etc.  I usually slip the skewers through green onion stalks to make them look like green stems.  Arrange the skewers like you'd arrange flowers in a vase, pushing the skewers into the cabbage half to hold them in place.  If it looks a little sparse, you can fill it in with kale, green leaf lettuce or parsley.  You can serve dip in a "bowl" made from a green pepper or a hollowed out cabbage.

It's not as hard as it sounds.  You have to clean and cut the veggies, anyway.  That's the hard part.   Hope this helps!
