Mother Nature has carefully packaged the world around you in a variety of beautiful colors, shapes and sizes. Have you noticed the rainbow of beautiful fruits and vegetables that are available? Why do they have these colors? In the field of science, we describe color as pigment. In food, this color or pigment makes the food look more appealing. It is also used to determine freshness or ripeness and to allow you to distinguish between varieties. Color is also a great indication of the food’s health benefit.
Compare the relationship of color and health benefits. Include four color examples and a variety of fruits/vegetables from each color group. List the vitamins and/or minerals that these foods contain and how they help your organs and immune system to keep your body strong. Also, discuss how these nutrients may help to prevent future illnesses or diseases.
