  1. I don't know if eggs give taste or whatver but if all it does is make the food softer or something like it, then I would suggest a liquid that is kind of sweet but not something that can change the whole taste of what you're making. The above suggestions are great, I should try that one day.

She's got an entire entry on vegan baking substitutions and some easy recipes to try. The carob chip banana bread is great, even my non-veg friends liked it!

  3. There are a lot of things you can use as a substitute for eggs.  I've never used corn starch (because I didn't think I would like the taste), but I use 1/2 of a banana (mashed) to sub for 1 egg if I'm not going to be using them.

Here are some other things you can use...

  4. Corn starch for eggs sounds like it would taste dreadful. Try using egg subsitute, found generally in the dairy section or close to the real eggs in the grocery store.

  5. It would taste better to use applesauce, it works great. Use 1/4 cup per egg.

  6. Definitely check the link J.R. provided.

I've never used cornstarch as a sub, but Ener-G is basically a starch powder, so you might try the instructions (from J.R.'s link) for using Ener-G.  Might work.  I've tried Ener-G and it's OK, but it doesn't seem to yield the moistest results possible.

(FYI to the first answerer: those egg replacers like Egg Beaters are not vegan because they are made from... egg.)
