Vegan Breakfast....?

I am a vegan. I am getting bored with my current "foods"...what do you eat for breakfast? What is your favorite vegan breakfast? If you have other fav vegan meals, please share...

Doesn't have to be anything fancy! The easier the better!

  1. Dry or hot cereal with fortified milk alternative (normally soy rice, or hemp, etc), with nuts and/or flaxseeds and fruits.

    Tofu scramble with tempeh bacon and shredded hash browns.

    Vegan pancakes/waffles with a fruit salad.

    Vegan scones, muffins, sweet breads, cinnamon rolls, donuts, cakes (banana, coffee, etc), balkans, or bars.

    Breakfast casserole or breakfast pizza.

    Hashbrown casserole.

    Breakfast tacos with corn or flour tortillas and tofu scramble, hash browns and vegan bacon or vegan sausage with pico de gallo and avocado.

    Mini vegan quiches.

    Vegan frittata or omelette with hash browns and vegan sausage.

    Potato or zucchini latkes/cakes with tofu scramble.

    Breakfast pasta or salad.

    Vegan eggs benedict or mcvegans

    Breakfast shakes and smoothies with a side of toast.

    Vegan rice or banana pudding, or yogurttt witth fruit and toast.

    A nice big creamy  fruit salad.

    Quinoa salad with fruits, veggie, nuts, cream/sauce and toast.

    Breakfast couscous with toast.

    Vegan bagel with cream cheese and other fillings with side of fruit or oatmeal.

  3. I usually have Kashi cereal with sliced almonds, fresh berries or banana slices, and soy milk for breakfast. Hummus on pita bread w/lettuce & tomato is my favorite vegan lunch; I use a simple recipe--just blend a can of chick peas (15 oz) with 1/4 c. olive oil, 1 tbsp lemon juice, & 1 1/2 tsp. cumin. I make a lot of smoothies, too, with basically equal amounts of ice, soy milk, fresh fruit, and fruit or vegetable juice. And ratatouille for dinner--it's easy and adaptable, like hummus; just saute desired amounts of green zucchini, yellow squash, onion, bell pepper, and garlic w/ salt & pepper for about 5 min (I use 1 onion, 1/2 bell pepper, & 2 each zucchini & squash, +3 cloves garlic), add fresh tomatoes and tomato juice and simmer for 15-20 min, and serve on top of rice. Oh, and quesadillas stuffed w/ a mix of black beans, corn, and jalapenos.

  5. - oatmeal (the old fashioned long cooking kind, or steel cut) with fruit (raisins and bananas are really good), peanut butter, or molasses and cinnamon (tastes like oatmeal cookies)

    - whole grain toast with hummus or nut butter (cashew is my favorite)

    - wraps with fruit and peanut butter

    - fried potatoes

    - baked beans on toast (my boyfriend thinks I'm crazy, but it's good!)

    - smoothies - whatever fruit you like with soy or rice milk (frozen fruit works really well)

  6. I'm not vegan, but eat vegan often!! My fav vegan breakfast foods: old fashioned oatmeal that takes an hour to cook. these delicious whole wheat pancakes with a hint of pumpkin pie spice, so no maple syrup needed,  whole grain muffins of all styles (play around with ingredients). fruits/ fruits salads. cereal if in a rush. Breakfast burritos with scrambled tofu (sometimes), beans, fried peppers and onions. This delicious porridge from Le Dolce Vegan. That's all I can think of right now, I need to get some of my cookbooks back from my sister!!  

  7. Fresh fruit, soy yogurt, decaf green tea, oatmeal with soymilk (or rice milk sometimes) and raisins, tofu scramble, fakin' bacon (very rarely), cereal with soymilk (or ricemilk), a handful of nuts, toast with peanut-butter (sometimes almond butter)....

    Any of those sound good?

  9. Vegan pancakes(soy milk replaces milk and vegetable oil,flaxseed oil,or canola oil replaces eggs), a bowl of grapes. A handful of roasted almonds. A glass of unpasteurized orange juice.

  10. I usually eat breakfast at work so it's something pretty quick like:

    -Toast with vegan margarine/peanut butter/hummus

    -Fruit

    -Muesli or Granola with soy milk

    On the Weekends I don't make breakfast foods too often but I do love to make Scrambled Tofu and Hash Browns.  One time I made an Egg "McMuffin" out of an english muffin, fried tofu coated in nutritional yeast, veggie ham, and a vegan cheese slice. Awesome.


  11. I eat a fresh bowl of fruit, strawberries, grapes, bananas, and slice peaches. Add a cup of hot tea and I'm good to go.

    2.  Oatmeal with raw sugar, soy milk, and any kind of fruit...

    3.  Cold fortified breakfast cereal with soy milk...

    4.  leftover brown rice heated with raw sugar, soy milk and fruit...

    5.  leftover vegan pizza :)  

    6.  vegan French toast or pancakes.  google the recipes...

    7.  fruit salad...

    8.  beans on toast...

    9.  toast with vegan spread and jelly...

    10.  toast with vegan spread, raw sugar and brown sugar...

    11.  smoothie made with frozen juice concentrate and soy milk...

    12.  vegan cake and a cup of coffee...

    13.  scrambled tofu and homefries

    There are a few.  I hope that is helpful.  You should go to Bob Evans and order their "topped oatmeal".  It comes with a variety of toppings and you can take your own soy milk.  It is the best oatmeal I have ever had!!!  We went out to breakfast to celebrate the kids going back to school!!!  YAY!!!
