    Vegan Cottage Pie!!!



    Traditional cottage pie apparently uses beef. I think it is much better made without!

    Ingredients

    1 tbsp oil

    1 onion, chopped

    1 clove garlic, chopped

    1 carrot, diced

    2 sticks celery, diced

    10 oz mushrooms

    2 tsp dried mixed herbs

    2 tbsp soya sauce

    vegetarian worcester sauce

    1 tin tomatoes

    1 tbsp tomato purée

    2 lb potatoes

    soya marg

    soya milk

    Method

    Fry the onion in the oil until starting to brown.

    Add the garlic, carrot, celery, mushrooms, herbs, soya sauce, a dash of vegetarian worcester sauce (standard worcester sauce contains anchovies), tomatoes, tomato purée, 200ml water, and freshly ground black pepper.

    Leave to simmer. Meanwhile, peel and boil the potatoes until soft, then mash with a k**b of soya marg and a splash of soya milk.

    Put the mushroom mixture in an ovenproof dish, pile the mashed potato on, put a dab of soya marg on top and cook in a moderate oven for around 45 minutes until the top is golden brown and crispy.

    Serve straight away with steamed greens and lashings of tomato ketchup!

    Fantastic (very rich) Chocolate Cake

    Ingredients:

    1 and a half cups unbleached white flour

    1/3 cup unsweetened cocoa powder

    1 teaspoon baking soda

    1 cup sugar

    half a cup of mixed, chopped nuts (optional)

    1/2 cup vegetable oil

    half a cup cold water or soy milk

    half a cup of orange juice

    2 teaspoons vanilla extract

    2 tablespoons vinegar



    Preheat oven to 375 degrees. Sift dry ingredients into 8" square or 9" round baking pan. Mix liquids (except vinegar) and whisk into dry. When batter is smooth, add vinegar and stir quickly, until it is evenly distributed. Put it in the oven, don't let it stand around (that has something to do with the vinegar) Bake for 25-30 minutes...or longer until done. This cake is great served with Provamel's soya dream (cream like). Pictured on right with a chocolate "butter" icing (blob of marg, bit of icing sugar, spoon of cocoa, all creamed together) and sprinkled with flaky vegan hot chocolate or whizzers chocolate beans.

    Soya Bolognese

    Ingredients

    2 tbsp olive oil

    1 large onion

    2 cloves garlic

    225g (8 oz) frozen soya mince or 50g (2 oz) dried soya mince (soaked)

    10 medium tomatoes or 1 tin of tomatoes

    1 tbsp tomato puree

    100ml (4 fl oz) water

    Large handful of fresh basil, parsley or coriander

    Salt and pepper

    350g (12 oz) spaghetti

    Instructions

    1)If using fresh tomatoes, put them in a bowl of boiling water for about 1 minute, then take the skins off. Chop the tomatoes.

    2)Chop the onion and garlic and fry in olive oil until softened.

    3) Add the soya mince, tomatoes, puree, water, salt and pepper.

    4) Simmer for about 30 minutes, then add the chopped fresh herbs.

    5) Meanwhile cook spaghetti in fast boiling water for about 11 minutes. Drain, and divide between plates. Serve with sauce on top.

    Haha and to hotheat7 vegan means No animal products so no Mayo, tuna or chicken, and maybe even no pasta if it is egg pasta

    Hotheat's use of mayo is easily made vegan but simply using eggless vegan mayo such as Vegenaise, Nayonnaise, Trader Joe's Reduced Fat Mayo, etc.

  8. I am not sure if this is vegan, but you might try it. Its really good and actually easy to make.

    Pasta salad

    1 red bell pepper

    1 green bell pepper

    1 head of broccli

    1 head of cauliflower

    1 box of tri colored rotini noodles

    2 TBsp. regular mayo

    1/2 cup cooking oil

    Dash salt and pepper

    Boil the oil and noodles(with water of course) in a pot until the noodles are soft but not mushy. (the oil just keeps the noodles from sticking together)..In another pot boil the broccli and cauliflower until its edible but not mushy. In the meantime finely chop the bell peppers, add to a large bowl, add the mayo and season with black pepper and salt to your desired taste. Once the broccli/cauliflower and noodles are done, rinse them off in cold water to cool them off faster. Then add everything in the large bowl and stir. You might have to add more salt and pepper to taste. Either serve it up right away or put it in the fridge to get it cold.

    Variations are to add onion, celery and tuna (or cooked chicken)..

  10. Vegitarian Chili

    1/2 cup of olive oil

    4 onions chopped

    2 green and red bell peppers seeded and chopped

    4 garlic cloves

    14 once of tofu drained and washed

    4 cans of black beans drained

    2 cans of crushed tomatoes  

    2 teaspoons of salt

    1/2 teaspoon of black pepper

    2 teaspoons of ground cumin

    6 tablespoons of chili powder

    2 tablespoon of oregono

    2 tablespoons of vinegar

    1 tablespoon of your fav hot suace.

    1.heat olive oil in large skillet at med heat..add onions cook and stir until soft.add peppers garlic and tofu.cook until brown and tender.

    It should take 10 min.

    2.put beans in slower cooking and set to low.Add the veggie and tomatoes.season all of the seasonings.stir gently and cover in a pot.Good luck:)
