Question:

Vegan Lunch..?

I tried to go vegan a few months ago,I had been a vegetarian for about a year or so,but I had failed.The reason was,food.In my school cafeteria,I seriously wonder if there is a slaughterhouse behind it.We have never had one salad choice or anything that isn't pizza,nachos grande(that means it's cheese,meat,salsa,etc.),tacos,chicken fingers,hot dogs,and things like that.Now you're probably thinking,okay...well you were a vegetarian and got through it..what's your point?Well,I went to another school until I moved,and now I go to a different school,and in my old school we didn't have hot lunch choices,we brought our own.I want to go vegan again,and school reopens in September,I need to think of some ideas for lunches I can bring to school...I don't like soy/tofu,or hummus.Any ideas?Thanks y'all :]

  1. School lunch programs are a disgrace. They advocate eating healthy and then slather the kids down in greasy meats and milk and flimsy pre-packaged iceburg salads and little wilted carrots.

    Tabouleh salad is very good and its super healthy and so easy to make. You can make a huge batch on monday and just eat it constantly as the week goes on (I don't know a recipe off the top of my head, so look online.) Something I find really good is this sandwich:

    1 c. spinach

    medium yellow onion

    1/4 c. pine nuts

    1 medium tomato diced small

    Sautee all of that in a pan in some peanut oil (it gives the taste) and put on bread. I usually add chicken bc I'm not vegan, but you can leave that out or add whatever else you want.

    Other ideas:

    beans and rice

    steamed vegetables

    hot soup in a thermos

    salad stuffed into a pita

    vegetable juices

    you can make your own chips or fries by cutting potatoes, putting them on a greased cookie sheet with whatever spices you want (I usually go with cumin, pepper, chilli powder, oregano, but salt works too) and bake 350 for 20 minutes or so

    they have a lot of vegan food. i'd go there and stock up on mock meats and such. (:

  3. Peanut butter and jelly sandwich

    Pasta (i love cold pasta)

    Vegan pizza (whole wheat crust, tomato sauce, any veggies)

    Cereal (pack cereal and soymilk in separte containers)

    Veggie burgers/dogs

    Salad (pack dressing separately)

    For extra nutrients and protein, you can pack some nuts to go with your lunch. (I usually bring cashews or almonds)

  4. Find breads that you like like grain bread or sour dough or pitta bread. Then write out a list of vegies you like and try combinations.

    Mushroom pate is a great standby and goes well with salad items or try a peanut butter and salad roll.

    Ingredients:

    1 onion, chopped

    1 tbsp margarine

    2 pounds fresh mushrooms, finely chopped

    4 cloves garlic, minced

    2 tbsp chopped fresh parsley

    2 tbsp chopped fresh rosemary

    1 1/3 cups bread crumbs

    2 tbsp lemon juice

    salt and pepper to taste

    Preparation:

    In a large saucepan, heat the margarine and cook the onion for 10 minutes.

    Add the mushroom and cook for another 10 to 15 minutes. Remove the mixture from the heat and add the remaining ingredients.
