Vegan Mac'N Cheese?

Ok I have tried TONS of recipes for vegan mac n cheese and they were all horrible. I recently had some mac 'n cheese at a vegan cafe near by. They listed everything they used to make it and it was nothing more then Vegan Gourmet Cheese, butter, salt and noodles & it actually tasted just like cheese for once, actually better then real mac n cheese.

I want to make this it seems very easy but it also seems like I might need some soy milk, I worry about the cheese burning.

Has anyone made one just like this? how long did it take to melt the cheese? & would I need to add some milk? or maybe something else?

I do want to cut back on the butter cause theirs was swimming in grease I actually had to dab my noodles off on a napkin LOL, but I am guessing alot was added to help the cheese melt.

  1. As my pasta is boiling in salted water(1 lb to aldente), I cut 1 lb. of soy cheese into tiny cubes on my cutting board.  Then I place the cheese in a small pot with approximately 4 tbsp of plain soy milk and 4 tbsp of vegan garden spread.  I heat pan to boiling, stirring it constantly.  By the time it is boiling it only takes around another minute to finish melting completely.  Then I turn the burner off and stir it until it stops boiling.

    I drain my pasta and poor it back into the pasta pot.  Then I pour the cheese mixture over the pasta and turn the pasta pot burner back on.  I stir the pasta and the sauce together until the pasta is completely coated.  Then I turn the burner off.

    I plate the mac and cheese with stewed tomatoes as a side dish.  I use Red Pack because they are vegan.  I just heat them up in the microwave in between doing the rest of the stuff.  We get the big can.

    My kids love it and so do my husband and I.  We have it once per week.  It costs us around 8.00 and it feed the 4 of us well with some leftovers.  

    In my recipe there is very little butter.  3 tbsp split between 4 people is barely any, especially considering the fact that vegan butter is way different than regular butter.  Also, you do not need to use the vegan butter at all.  The cheese and milk melt on their own.  Just be SURE to stir constantly.  It only takes maybe 3 minutes of stirring.

  3. Ask the chef for the recipe. :-)

    Find out what they used for cheese. Most vegan cheeses don't like to melt all that much. It could be that they just use a good brand.
