Vegan Mashed Potato Recipe?

I am looking for a really good recipe for mashed potatoes. It has to be vegan, meaning no dairy, eggs, or meat please.

I have tried making it with just soy milk but it turned out terrible.

I will give 10 points to the person who gives me the recipe that sounds the best. I appreciate your help and thank you in advance...Get out your cookbooks, fellow vegans...

  1. Try this recipe quick with less ingredients.

    Boiled Potatoes (6 medium)

    Light Cream (2 spoon)

    Sandwich Spread (2 spoon)

    Salt (accord)

    Black pepper crush (optional or accord)

    Butter (3-4 spoon)

    Chopped Parsley

    Take a pan mashed potatoes with butter on a slow flame once mashed like smooth mixture add light cream,sandwich spread and mix well.Last add salt & black pepper and chopped parsely.

Hi!  I'm not vegan, but have had to substitute when out of certain items.  What about vegetable broth?  Use that to thin out your potatoes while also mashing in several cloves of roasted garlic!  If you want to get a more creamy consistency, try using some silken tofu? or even unsweetened almond or rice milk?  Salt and pepper to taste!  Good luck!

    Boil some the potatoes -

    Leave skins on! (Very good and healthy)

    Mash them with a lot of Garlic cloves!

  4. i think it's tofutti that makes vegan sour cream and vegan cream cheese.  those would make mashed taters good, i imagine.

I make mine with Yukon Gold potatoes (they're nice and creamy when you mash them, even before the "milk.")  I do use a splash of soy milk and lots of Earth Balance and they come out great.  Sometimes I mash some cloves of roasted garlic in there too, plus some salt and pepper.  I've fed these to omnis at Thanksgiving and they loved them just as much as milky/buttery ones.

  8. When I used to cook for my Dad (not a vegan) I made simple mashed potatoes, with just butter and milk. Now when I cook for my husband (vegan) I make just-as-simple mashed potatoes, with [a small amount of] water and vegan margarine. I personally dont care for mashed potatoes, but I'm told my vegan potatoes taste just as good as my non vegan ones. The people who suggested seasonings (veg. broth, garlic, etc) may be on to something, though.

  9. You could use any of the above recipes, or you could do this...

    Use equal parts red potatoes and Idaho potatoes. The fact that the reds will reduce the starchiness of the final product adds to their deep and flavorful greatness!

    Use Soy Garden (non-hydrogenated) as you would butter, also as mentioned above Tofutti sour cream is pretty much the deal.

    I like to throw in a fresh herb as that "freshens" up the flavor quite a bit. Folding in some finely minced flat leaf parsley last minute brings forth a bouquet of indescribable aroma-therapy.

    I stay away from soy milk and do not promote its use. I would invite you to look at other "milk" alternatives like hemp milk... delicious!

    As always use un-refined sea salt and fresh cracked peppercorns to season and enjoy... I love wild mushrooms sauteed in premium olive oil and black pepper served on top of the fresh parsley potatoes.

  10. This is going to sound silly, but did you use unsweetened soy milk?  Some people get the vanilla soy milk and forget it's not for savory dishes.  Get plain unsweetened soy milk instead.

    Yukon Gold potatoes are really good for a mashed potato recipe.

  11. it's okay to use soy milk that's how i make mine, just make sure you do these things:

    * Mix soy milk about 2 tbs at a time while mashing the potatoes

    * use an electric whisk( if you don't have one it's okay)

    * add thyme and galic

    * leave the skin on the potatoes

  12. Just mash it up with a sea salt and cracked pepper seasoning - beautiful.

    In most of my recipes I use a mashed organic avocado in place of butter and it tastes better too.

    For me, it has to be organic as I find them a lot smooth and creamier than the non-organic ones.

    Using organic potato's also adds to the overall better taste.

    Sometimes I leave the skin on the potato before cooking, as it adds an extra texture to the mashed finish. I will sometimes also add roasted garlic for an extra lift.

  13. Ah, don't use the regular soy milk for mashed potatoes, use the soy creamer, it's thicker and sweeter.

    Basically, boil the potatoes for about 25 minutes or so (until they are good and cooked). Then mash them up adding some soy creamer and veggie-butter until they are creamy.
