Vegan dinner guest?

Tonight I'm having a vegan friend to dinner, and I can't get in touch with her to ask what "alternative" entree I should serve for her. Ideas, please?

  5. I wonder how much Vegans hate going to dinner parties where the host doesn't know much about their world ...

    Granted, I don't know what you were planning on cooking for everyone else, but my no fail vegan meal for friends tends to be a grilled Eggplant, Heirloom Tomato and Soy Mozzarella stack with basil, balsamic vinegar and a splash of olive oil.

    If your going for something a little more Asian, you can make a Veggie stir fry and make your own sauce with a cup of vegetable stock, 2 teaspoons of Mirian, 1 tablespoon of cornstarch and a tablespoon of sugar, with some Soy Sauce to taste.  After the veggies are cooked up, you add the sauce and it thickens up to a nice stir fry sauce you control the content of.

    If you want to get everyone involved in the Vegan experience for desert, i'd suggest a Strawberry Bruschetta ... take a nice plain Focaccia and drizzle a little lite olive oil, and then sprinkle a mix of white sugar, brown sugar and cinnamon on top, and toast for a few minutes.  Take a pound of strawberries and dice them thin with a few leaves of finely chopped mint, and mix with some sugar.  Place that on the bread and toast on high for about a minute (or under a broiler) and you will have a lite desert that is friendly for everyone.
