  1. My "I'm lazy and don't feel like busting my *** in the kitchen" meal tends to be good ol' fashioned pasta and sauce, maybe with veggies thrown in. For lunch, I make wraps- spread some hummus on a whole wheat wrap, chop up some veggies, ad a little dressing, tada!


  2. Hummus and veggie wrap

    I like the flavored hummus (Roasted Red Pepper) spread on flavored tortillas, with sauteed pepers and onions, broccolli/ rolled into a wrap.

    I also like the Tofutti spread on bread with avocado, red onion, yellow and red peppers, sliced English cucumbers, and baby spinach. Make this a triple decker.

    Sauteed collard greens, red peppers, and onions

    BBQ Tofu sandwich

    Cube extra firm tofu and saute or fry

    Cut pita bread in half add sprouts and shredded carrots (small amount)

    Mix spices and bbq sauce on tofu and put in pita add more sprouts and carrots Top w/ Dijon Nayonaisse

    Fresh Corn Saute w/ Tomatoes,Okra and Squash

    1/2 cup yellow cornmeal

    1/4 teaspoon (or more) cayenne pepper

    12 okra pods, cut crosswise into 1/2-inch pieces

    6 tablespoons olive oil, divided

    2 cups fresh corn kernels (cut from about 3 ears of corn)

    6 baby green pattypan squash, each cut into 6 pieces

    2 garlic cloves, chopped

    1 12-ounce bag cherry tomatoes, halved (2 cups)

    2 tablespoons chopped fresh cilantro

    2 green onions, chopped

    Mix cornmeal and 1/4 teaspoon cayenne in small bowl. Add okra and toss lightly to coat. Pour okra into sieve and shake off excess cornmeal.

    Heat 4 tablespoons oil in heavy large skillet over medium heat. Add okra and sauté until coating is golden brown, stirring occasionally, about 6 minutes. Using slotted spoon, transfer okra to paper towels to drain; sprinkle with salt and pepper. Wipe out skillet. Heat remaining 2 tablespoons oil in same skillet over medium heat. Add corn, squash, and garlic; sauté 2 minutes. Add tomatoes; cover and cook until squash is crisp-tender, about 5 minutes. Mix in okra, cilantro, and green onions. Remove from heat. Season to taste with salt, pepper, and more cayenne, if desired.

  3. EASY PASTA

    Ingredients (all amounts are up to you):

    Pasta

    Marinara

    Bell Peppers

    Mushrooms

    Spinach

    Oil

    Spices

    Saute mushrooms over medium high heat in a little bit of oil until slightly softened, then add bell peppers and cook, stirring occasionally, until veggies are softened.  Add spices of your choice (black pepper, cayenne pepper, basil, etc.), stir, then add prepared marinara sauce and stir in spinach leaves.  Turn heat down to low, cover, and simmer to keep warm while you cook the pasta.  For the pasta, in a separate saucepot, cook according to package directions.

    MARINATED TOFU:

    Tofu

    Soy Sauce

    Sesame Oil

    Veggie broth or water

    garlic powder or minced garlic

    ginger powder or minced ginger

    Asian garlic-chili sauce (optional)

    Mix all liquid ingredients and garlic and ginger in a wide bowl.  Cut up tofu to desired size then put toss in the marinade.  Let sit for around 20-30 minutes in the fridge, then stir again and let sit for additional 20-30 minutes. Heat a small amount of oil in a pan and brown marinated tofu over medium to medium-high heat.

    Serve with salad, tater tots, steamed veggies, etc.

    TACO SALAD

    Mixed greens

    Canned black beans, drained

    salsa

    guacamole or mashed avocados

    Make a bed of salad greens then top with beans, salsa, guac, and anything else like lime juice, salt, hot sauce.  You can add crumbled corn chips on top for a little crunch.

    i like stirfry tofu, just buy your favorite veggies and fry them and cook some rice.

    i also like beans, with tortilla and veggies,

    there is always spaghetti or vegan lasanga
