Vegan pancakes?

ok im just making the box type pancakes that need the mix, milk, and eggs. for milk im just using soy milk, but for the eggs i wanna know if applesauce will work and how much i need for every egg? if you dont think applesauce will be good tell me a better substitute, thanks

  1. you can just skip the egg altogether.

    applesauce or other pureed fruit is a substitute for oil, butter, or other fat.


  2. I use Ener-G egg replacer. You just mix the powder with the right amount of water (it says on the box), and use it to bake. It works really well in pancakes and waffles - I tried it a couple weeks ago.

  3. You can buy a vegan protein powder at most health food stores, or just the veg oil you use will keep them tender, I ama former chef and the eggs and leavening agents are what keep them fluffy and not going hard like hubcaps.

    The fruit purees are nice, I make a mix of unbleached flour, WWflour, rice flour, corn flour, barley flour, oat and rye flakes, flaxmeal, organic cane extract for the sweetness, a bit of soya milk and soya yougart or soya cream cheese it nice, veg oil and a dash of baking soda, for the leavening and slat componant, I make up the dry mix and just measure out a bit and add my liquids.

    As for one fellow, remarks like yours are uncalled for!!!

  6. Ener-G Egg Replacer!  It comes in an ugly 70s-ish orange box and makes about 100 eggs.  You take 1/2 tbsp of the Replacer and 2 tbsp water per egg, mix well, and add to the batter.

    Silken tofu, the kind in the aseptic box, might also work here.  You use 1/4 cup of silken tofu per egg and liquefy in a blender.

  7. Instead of 1 egg, you can use...

    1 tbsp gram (chick pea) or soya flour and 1 tbsp water

    1 tbsp arrowroot, 1 tbsp soya flour and 2 tbsp water

    2 tbsp flour, 1/2 tbsp shortening, 1/2 tsp baking powder and 2 tsp water

    50g tofu blended with the liquid portion of the recipe

    1/2 large banana, mashed

    50 ml white sauce
