  1. I just made the yummiest spinach, tomato and carrot pasta.

    Ingredients:

    1 bag pasta

    1 bunch spinach

    onion

    garlic

    canned tomato

    coriander

    basil

    mixed herbs

    cracked pepper

    salt

    method:

    1 boil the pasta and drain when cooked.

    2 chop up carrots, onion, spinach and herbs

    3 saute the onion with some olive oil. add the large can of tomatoes, herbs, garlic, cracked pepper & salt. Cook on stove top for a few minutes.

    4 put all the pasta in a large oven tray, add spinach, carrots & sauce.

    5 cover with foil and cook in the oven for 20 minutes.

    You can add vegetarian cheese too if you like

    Whole wheat pasta

    Steamed broccoli

    Extra virgin olive oil

    chopped garlic

    Steam broccoli florets, cook pasta and heat oil and garlic together until it has that nice garlic smell.  The more garlic, the better : )

    Combine and eat.

  3. had a pumkin, spinach and pinenut pasta other day- was pretty yum. dunno that it's exactly a sauce though- u could blend it if you really wanted to- but dunno that it'd look too yum then.

    3 carrots, peeled and cut into thin strips

    2 medium zucchini or 1 large zucchini, cut into thin strips

    2 yellow squash, cut into thin strips

    1 onion, thinly sliced

    1 yellow bell pepper, cut into thin strips

    1 red bell pepper, cut into thin strips

    1/4 cup olive oil

    Kosher salt and freshly ground black pepper

    1 tablespoon dried Italian seasoning

    1 pound farfalle (bowtie pasta)

    2 Tablespoons minced garlic

    15 cherry tomatoes, halved

    1/2 cup grated Parmesan

    Preheat the oven to 450 degrees F.

    In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.

    Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.

    Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

  7. You can buy pasta sauces that are Vegan.  You just have to read ingredients.  Some have meat or dairy ingredients.  If you make your own you can control what ingredients go into it.  Go on google for some recipes.
